Sweet N’ Spicy Salmon Burgers

So if you haven’t noticed I started a new feature Kitchen Cutie all about my new found desire to become a better cook. The Chicken Tacos were absolutely amazing so the next recipe on the list to try is Sweet N’ Spicy Salmon Burgers!

SalmonBurgerThis is What You’ll Need:

Sauce
1⁄4 cup lime juice (grate zest first)
1 Tbsp less-sodium soy sauce
1 Tbsp sugar
1⁄4 tsp crushed red pepper

Burger
1⁄2 red bell pepper, cut up
1⁄3 cup packed fresh cilantro
1 slice peeled ginger, 1⁄2 in. thick
1 clove garlic
2 tsp red curry paste
1 tsp grated lime zest
1 tsp sugar
11⁄2 lb skinless salmon, cut in 11⁄2-in. chunks
1 Tbsp vegetable oil

Directions

1. Sauce: Mix ingredients in a small bowl.
2.Burgers: Put bell pepper, cilantro, ginger, garlic, curry paste, lime zest and sugar in a food processor and pulse until blended. Add fish and pulse until just blended.
3. Shape level 1⁄4-cupfuls fish mixture into twelve 3-in. patties. (At this point the fish may be loosely covered and refrigerated for up to 4 hours.)
4. Heat oil in large nonstick skillet over medium-high heat. Add half the fish burgers and cook about 1 minute on each side, until just cooked through. Drain on paper towels. Cook remaining fish burgers. Serve with sauce.
